Love the recipe

I foun this recipe on my friends blog http://mimicooks.com/ I made and love it. I am posting it to my blogs, however, all credits go to Mimi cooks (thank you Summer).

Today I am posting two types of salad using Arugula leaves. I like Arugula fresh leaves in salads. I like the delicate leaves texture, the peppery flavor and the many health benefits of it. Arugula has different names, you may find it under RocketRukola, Rucketta or Roquette.  
Beets are another vegetable that is full of flavor and many health benefits. The combination of Arugula and Beets is a wonderful mix that has a very fresh flavor, they both compliment each other so well which makes it hard to resist eating them in a  refreshing salad.
Arugula and Beets salad
Arugula or Rocket
Beets
Onions
Gorgonzola Cheese 
Red vinegar or balsamic vinegar
olive oil
salt and black pepper
Directions: 
Boil the beets until soft or you can use canned beets.  Slice it.
Place the arugula in a salad bowl, you may chop it if you like, but i leave it whole.
Add the sliced onions and the sliced beets 
Add the vinegar and oil
Add the salt and black pepper
Add the Gorgonzola cheese  
Mix gently. 
Place in a serving platter 
Serve and enjoy!

Arugula, Tomato and Sumac salad
Arugula
Tomatoes, sliced
Onions, sliced
Olive oil
Lemon juice
Sumac
Salt and black pepper

Mix all ingredients and dress with olive oil and lemon juice. Serve and enjoy!
